Nutty Sweet Potato Soup
1 tablespoon corn oil
1 large Onion, diced
1 medium yellow bell pepper, diced
2 medium carrots, diced
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 clove of garlic, minced
1 teaspoon grated fresh ginger
1 large sweet potato, cubed
6 cups low sodium chicken broth
1 14 oz can diced tomatoes
1/3 cup creamy peanut butter
2 teaspoon honey
1/2 cup shopped scallion greens
Head the oi in a large pot on medium heat. Add onions, bell pepper, and carrots stir until soften. About 5 minutes. Add the cayenne, black pepper, garlic, and ginger and cook for 1 minute Stir in the sweet potatoes, broth, and tomatoes and bring to a boil. Reduce the heat to medium heat for 20 minutes.
Puree the soup. Add peanut butter and honey and stir over medium heat.
Garnish with with scallions.
