Punch Pizza cooks their pizzas in a wood fired stone oven in minutes.



Every time I go to Punch I order the same pizza, Toto. It makes me laugh just thinking of the time my dad came with me and said to the lady taking his order "I'll take (and he barked), you know the dog pizza" Can't take my dad anywhere without blushing.

Toto - Arugula, prosciutto, goat cheese, & garlic
&
Borgata - Sun-dried tomato, goat cheese, eggplant saracene olive, & basil.

They laid out the eggplant on the pizza like spokes on a bike wheel. The sauce on both were different. The borgata had a basil olive sauce favor and basil is my favorite spice. But still my favorite pizza on earth is the Toto pizza. The arugula and garlic favor is amazing. If there was a Punch pizza near me that would be the only place I would go for pizza.

Dessert Course

A tasting menu walks you through the chef's creative vision to sample what they have to offer. This project was inspired by the restaurant tasting menus, giving a taste of the thought process. Each frame was careful thought out with a color theme and layout. This theme and concept was my idea. I teamed up with Kimberly Colburn, a local food stylist and Laura Dokken a designer.

Business Card

The meaning behind the logo

Logo – Mineau is my maiden name. Pronounced minnow like a fish. And this was how I would introduce myself to others.

My nickname was ‘Jenny like a minnow’ or fish. Kind of funny because I don’t like fishing and I’m not big into eating fish. But I do love my fish tank of fish. And no I can’t really swim, only to say my life. For many years I would sign my name with a fish sign and nothing else.

And why stop there. The meaning behind my business cards.

The orange strip – favorite color – pumpkin, favorite food – pumpkin pie, favorite vegetable – sweet potatoes, favorite color to wear – pumpkin (which I have 36 days of pumpkin), & ask me how’s it going or what’s up – peachy. So you can say I love my pumpkin anything.

Embossment – I am looking to standout. I have been fascinated with embossing since college where if someone wanted to emboss they would use their car as a press.

The texture – to grab who touches it. Touching one more viewers sense to keep their thought on me.

So now you know, Once a fish always a fish.

Cheese tray


I have been supplying the food for every meeting for the last two years. I love cheese and you can guess where I am from. I like to add a little touch to the cheese and sausage tray. All of the food I get from Sams club, which I have been a member since 94. Getting a packages of sausage, ham & cheese, and placing it on a tray is so quick. But it looks so good. Putting it all together only takes about 15 minutes. I was asked, so I timed it. Just wished I took a picture of the last ham and cheese trap, it looked amazing.


Like the commercial. I brought them CHEESE...

Buttermilk Waffles

Buttermilk Waffles


1 egg
1 cup all purpose flour
1 tsp baking powder
1/8 tsp Baking Soda
1/8 tsp Salt
1 tsp Sugar
1 cup Buttermilk
2 tbs Butter, melted

Beat egg in a small bowl until stiff and set aside. Mix together dry ingredients and set aside. Combine Egg, buttermilk and melted butter. Add dry ingredients, mixing until just blended. Do not over beat batter. Pour into waffle maker.


Egg Bread

How we fell in love with Egg Bread.

We like to bike a lot on long rides. One of the trails we visit just outside of St Paul is the Cannon Valley Trail. This trail runs from Cannon Falls to Red Wing. We stop at each end and try to have lunch in Welsh. In Cannon Falls we stop at The Old Market Deli on 311 Mill Street West. This is a great place to have something small or share a malt. In Red wing we stop at Jenny Lind Bakery on 1925 Old West Main Street. We love their Egg Bread. One morning Larry decided to surprise me with his own Egg Bread that he got off of the internet. Many versions later, this is his version of the Egg Bread.

Egg Bread

6 Eggs
1/2 -3/4 cup Milk
3 Slices of bread, broken into small pieces
Cheese
Vegetable of your choice - Broccoli, tomatoes, peppers
Meat of your choice

Spray a 2 Qt baking dish
place the bread in bottom of dish,
add the egg and milk mixture,
add the rest of the ingredients.
Let stand for 15-30 minutes to allow the liquid to soak into the bread.

Cook at 350 for 1 hour.
