Orange Apple Pork Roast - recipe

Orange Apple Pork Roast


2 pounds boneless pork shoulder roast
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons cooking oil
16 oz Carrots, peeled and slice thin
1 1/2 applesauce
1/4 cup frozen orange juice concentrate
1/4 water
2 tablespoon quick cooking tapioca
1 1/2 teaspoon dried thyme


Sprinkle meat with salt and pepper and then place in a large skillet.  Add oil to the pan and brown the meat on all sides.  Drain off fat from the meat.  Place meat and carrots into a 3 to 4 quart slow cooker on low temperature.  In a medium bowl mixture applesauce, orange juice, water, tapioca and thyme together and transfer to cooker.  Cover and cook for 8-10 on low setting.

Fennel and Pear Chicken Thighs

Fennel and Pear Chicken Thighs


1 medium fennel bulb, trimmed and sliced
6 oz of fresh mushroom
3 pears, cored and cut into wedges
2 tablespoons quick cooking tapioca
2 pounds of skinless chicken thighs
1/2 teaspoon salt
1 teaspoon dried thyme
1/2 teaspoon cracked black pepper
1 cup of apple juice

 In a 3 to 4 quart slow cooker place sliced fennel, mushrooms and pears.  Sprinkle tapioca over mixture.  Add chicken thighs and sprinkle with salt, thyme, and pepper.  Pour apple juice over  the mixture.  Cover and cook on low heat for 7 to 8 hours.  Serve of rice or couscous.  Garnish with fennel tops snips.

Cranberry Chicken

2 mediums apples, cored and cut into wedges
1 medium onion, thinly sliced
6 or 2 pounds skinless, boneless chicken breast halves
1 16 ox can whole cranberry sauce
1/4 cup frozen lemonade concentrate
2 tablespoons quick cooking tapioca
2 tablespoons honey
1/4 teaspoon of salt


In a 3 to 4 quart slow cooker combine apples, onions, and chicken pieces. 
In a medium bowl combine cranberry sauce, lemonade concentrate, tapioca, hone, and salt. 
Pour over mixture in cooker.   Cover and cook on low heat for 6 to 7 hours.

Egg Bread

How we fell in love with Egg Bread.

We like to bike a lot on long rides. One of the trails we visit just outside of St Paul is the Cannon Valley Trail. This trail runs from Cannon Falls to Red Wing. We stop at each end and try to have lunch in Welsh. In Cannon Falls we stop at The Old Market Deli on 311 Mill Street West. This is a great place to have something small or share a malt. In Red wing we stop at Jenny Lind Bakery on 1925 Old West Main Street. We love their Egg Bread. One morning Larry decided to surprise me with his own Egg Bread that he got off of the internet. Many versions later, this is his version of the Egg Bread.

Egg Bread

6 Eggs
1/2 -3/4 cup Milk
3 Slices of bread, broken into small pieces
Cheese
Vegetable of your choice - Broccoli, tomatoes, peppers
Meat of your choice

Spray a 2 Qt baking dish
place the bread in bottom of dish,
add the egg and milk mixture,
add the rest of the ingredients.
Let stand for 15-30 minutes to allow the liquid to soak into the bread.

Cook at 350 for 1 hour.
