Orange Apple Pork Roast
2 pounds boneless pork shoulder roast1/2 teaspoon salt1/2 teaspoon black pepper2 tablespoons cooking oil16 oz Carrots, peeled and slice thin1 1/2 applesauce1/4 cup frozen orange juice concentrate1/4 water2 tablespoon quick cooking tapioca1 1/2 teaspoon dried thyme
Sprinkle meat with salt and pepper and then place in a large skillet. Add oil to the pan and brown the meat on all sides. Drain off fat from the meat. Place meat and carrots into a 3 to 4 quart slow cooker on low temperature. In a medium bowl mixture applesauce, orange juice, water, tapioca and thyme together and transfer to cooker. Cover and cook for 8-10 on low setting.
