Lunde's Breakfast
Olympic Oatmeal is something we ate in Switzerland years back, which we just loved. Larry came up with a recipe and has made modifications to it though the years. This is the one food we eat a lot of for breakfast. I have talked about it with friends, so I thought it was time to post the recipe and share.
Olympic Oatmeal
for breakfast
very simple. 3 ingredients.
4 cups old fashioned oatmeal (uncooked)
3 cups apple juice
1 & 1/3 cups vanilla yogurt
Add to a bowl and mix. Cover and place in refrigerator overnight.
Serve with toppings of your choice.

note non-fat yogurt doesn't react right with apple and oatmeal, watery and doesn't break the oats down. And steel cut oats doesn't breakdown as well as old fashion oats.
