Pumpkin Waffles
using Queensland Pumpkin

Ingredients
- 1 egg, separated
- 1/2 cup all purpose flour
- 3/4 cup oats
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 tablespoon brown sugar
- 1/4 teaspoon pumpkin pie spice
- 1/3 milk
- 1/2 cup fresh pureed pumpkin
- 4 tablespoon butter melted and cooled
- 1/4 cup chopped walnuts or pecans
- Beat egg white in a small bowl until stiff and set aside.
- Mix together dry ingredients and set aside.
- Combine egg yolk, milk, pumpkin, and butter.
- Add to dry ingredients, mixing until just blended.
- Add nuts and fold in beaten egg white until just mixed. Do not over beat batter.
- Cook as directed on your waffle maker.
